THE MASH

MASHING & FERMENTATION

Our washed new potatoes from Bjäre are boiled in cleaned tanks in two sets.

The 1st set heats up to 90°C during 3h. We then let the mash cool down and in 2nd set we add yeast and enzymes for the fermentation. This lasts for 3 days in temperature of 30°C.

TOWER OF POWER

RECTIFICATION & DISTILLATION

We know need to rectify (distill) our crued alcohol to fine spirit. This is made in the pot still in two sets. 1st set during one day. 2nd set is the batch gained in the 1st set, added with water, and then rectified again. At reach of magical 96,2%, our spirit qualify as vodka.

It is during the distill and rectification process the master blend is put to work. It takes a skilled and experienced master blender to know when start and stop the process to capture the heart of each variety.
